Job Description

CORE:NY an exclusive private member only entity is seeking Pastry Sous Chef to join our team working directly with Chef Cecilia Chong. The  Pastry Sous Chef is responsible for supporting the Pastry Chef in overseeing menu design and production for the pastry station and all aspects of food production including quality assurance, cost control, employee relations and related tasks as it pertains to the pastry department. 

Qualified candidates must have a minimum of 2 years of management experience in a high volume dining environment and be well-rounded in pastry production and presentation in both restaurant and banquet settings. The candidate will have a solid understanding of restaurant operations, strong attention to details and sense of responsibility, organization, cleanliness and an ability to inspire staff to produce results with the right balance and commitment to excellence and the goal of exceeding the expectations of our guests.

Key Responsibilities

Production & Execution

  • Oversee daily pastry prep and service, ensuring consistency and quality at all times
  • Execute all desserts, breads, and pastry items to CORE: standards
  • Maintain organized, clean, and efficient pastry stations
  • Ensure proper storage, labeling, and rotation of all products
  • Support the Pastry Chef in menu development and R&Ds
  • Taste and evaluate all mise en place to ensure proper seasoning, consistency, and quality standards

Qualification Requirements:

  • Minimum 3 years’ experience in a restaurant with a focus on pastry, with at least 2 years of having managerial responsibilities
  • A genuine passion and knowledge for food and pastries
  • Culinary school attendance
  • Prior experience with laminated dough, cakes, ice cream, chocolate, and sugar work
  • Experience with service, plating and chocolate writing
  • Knowledge of how to work with a dough sheeter a plus
  • Dependable and hard-working
  • Sociable and friendly to staff and guests. We believe personality is your biggest asset.
  • NYC Food Handler's License a plus.
  • Must be available to work on different shifts, weekends, and holidays.
Compensation Details:

Compensation: Salary ($75,000.00 - $80,000.00)
