The Role: You are the absolute MVP of TAVA House. You are the backbone of the entire operation. We run a dynamic, multi-concept venue, and whether it’s a high-end dinner at Firebrand, a packed house in the TAVA Taproom, or a 200-person gala in the River Room, absolutely none of it functions without you. You keep the engine running by maintaining impeccable cleanliness, aggressively managing the flow of dishes and glassware, and ensuring the culinary and service teams have exactly what they need, the second they need it. You aren't just washing dishes; you are managing the critical turnaround of our most essential tools. You keep a cool head under pressure and are eager to wear "many hats"—whether that means jumping in to help with basic prep work, organizing the walk-in, or assisting the line cooks when they get into the weeds. Working closely with Executive Chef Victor Matthews and the entire management team, your hustle ensures the house operates at an elite, award-winning level.
Compensation & Our "One Team" Philosophy: Base Wage: $17
What You Bring:

  • An unmatched work ethic and a relentless sense of urgency. (Prior experience in a high-volume dish pit is a plus, but grit and a great attitude matter more).
  • A collaborative, ego-free mindset with a deep commitment to supporting your fellow cooks, the front of house, and the management team.
  • The agility and willingness to wear "many hats," stepping out of the dish pit to help with food prep, station stocking, or deep cleaning projects as needed.
  • An understanding of—or eagerness to learn—proper chemical handling, sanitization standards, and commercial dish machine operation.
  • Absolute buy-in to our shared-tip, one-team culture. You recognize that rapidly turning around spotless plates and glassware directly drives the tip pool for the entire building.
  • A positive, resilient attitude that helps boost the morale of the kitchen, even during the busiest rushes.

Physical Demands & Working Conditions:

  • Stamina: Must be able to stand, walk, and remain active in a hot, wet, and fast-paced kitchen environment for extended shifts.
  • Strength & Handling: Ability to safely lift 50+ lbs repeatedly. Must be able to move heavy trash and recycling bins, lift bulk chemical containers, and carry stacked racks of heavy plates and glassware.
  • Agility & Pace: Must possess the physical coordination to pivot quickly, safely handling hot items and wet floors while maintaining a relentless, high-volume pace.
